Cold weather Overheating now Overcooling

What a roller coaster I have been going through and wondering if anyone else has experienced this yet.  The end of December, it was -1 degree and I was on a 2 hour trip. Around 1 hour 45 minutes into the trip my 1.6l ecoboost started over heating.  I immediately pulled over on the side of the road and the temps came back down to normal operating temps.  The next day, I was on my return trip, the same thing happened. I immediately went to my dealership and explained my issue.  Of course they couldn't replicate it so they gave me my car back.  The very next week I was on the same trip but this time it was -17 outside.  This time it overheated in less than 45 minutes.  I immediately turned around and went back to the dealer.  At this point, it almost seemed like a computer problem because as soon as I started to slow down, the temps would drop back to normal.  Anyway, they actually replicated the issue twice the following day.  Well 1000 miles later and a week in the shop, they had no resolution.  I took my car because it was supposed to warm up and a resolution seemed out of reach.  The following week it was supposed to get very cold again so I brought it back in for them to take a look. That morning, my car shut itself down it over heated so badly and they had to tow it back.  Following this, they ended up replacing the Head coolant temperature sensor and a bypass valve that lets some of the coolant go past the heads and back through to cool off.  Now my engine doesn't overheat in the cold but when it dips back down to sub zero, it doesn't heat up all the way.  Also, if you slow down for say a small town or a round about etc, it actually drops in temp before you start to accelerate again.  I brought it back so they could check for air in the coolant system but they have found none.  It is now close to 30 degrees and I have never had issues until it is close to 0 or below.  I am starting to believe they will never figure out what is wrong with my car.  So, I apologize for the long post but has anyone else witnessed this with all the cold weather that has gripped our country the past couple months?  Thanks in advance.
