Sloshing sound behind dash

Hi Dusty. It is often caused by a little air in the system. When the vehicle has sat unused overnight, and the engine is cold, try filling the coolant reservoir about an inch above the "Cold Fill" line (with the proper specification and mix of antifreeze/coolant and water.). Drive a few days, and if necessary, check again. If necessary, refill to an inch above again, drive, check etc., until it no longer seems to be dropping. This sometimes helps to alleviate the situation.

Good advice above.  Another possible cause is a clogged A/C drain line, which can cause water from the evaporator to back up into the car. Is it warm enough in your area to still be using the A/C?  If no water has entered the cabin, this is less likely, though.
