You can use a headphone cable to play the ipod through the stereo - that's it. If you buy one w/o SYNC, get yourself a bluetooth compatible GPS like a Garmin Nuvi and you can pair the Garmin with your phone for hands free talking via the speaker and microphone built into the Garmin.
